Outback does not marinate their steaks. The secret to their great steaks is their season the steaks with their secret steak seasonins (a combination of 17 different spices) and cooking their steaks on a flat top grill instead of an open flame grill. The seasoning is a secret blend and must be ordered, not made in-house. The Kitchen Manager does not even have the exact recipe.
The benefit of using the flat top grill is that it seals in the juices of the steak. By creating a seared surface with the seasonings and cooking on the flat top grill with butter, even the medium well steaks typically will still have a good amount of juices still available.
