KOLACKY (KOLACHES)

1 cup milk, scalded
1/3 cup shortening (Crisco)
1/3 cup sugar
1 tsp. salt
Grated rind of 1 lemon
1 pkg. dry yeast
2 beaten eggs
3 cups flour

Combine milk, shortening, sugar, salt and lemon rind. Cool to lukewarm.

Soften yeast in this mixture.

Add eggs and flour. Beat well. Cover with a damp cloth. Let rise in a warm place, 80 to 85 degrees until double, abut 2 hours.

Beat and rise again.

Turn out, knead and let rest 10 minutes.

Roll to 1/2-inch and cut into 3-inch rounds. Place on greased baking sheets, cover and let rise until double.

Press in center and fill with jam.

Bake in preheated 400 degrees F oven for 15 minutes.
