APPLE CHEESECAKE
FOR THE CRUST: 1 cup graham cracker crumbs 3 tbsp. sugar 1/2 cup finely chopped pecans 1/2 tsp. cinnamon 1/4 cup margarine, melted FOR THE FILLING: 2 pkg. (8 oz. each) cream cheese, softened 1/2 cup sugar 2 eggs 1/2 tsp. vanilla FOR THE TOPPING: 4 cups thinly sliced apples 1/3 cup sugar 1/2 tsp. cinnamon 1/4 cup chopped pecans
TO MAKE THE CRUST: Combine crust ingredients and press onto bottom and sides of springform pan.
Bake at 350 degrees F for 10 minutes.
TO MAKE THE FILLING: Combine cream cheese and sugar, mixing at medium speed until well blended. Add eggs, one at a time, mixing well after each addition. Blend in vanilla, pour over crust.
TO MAKE THE TOPPING: Toss apples with combined sugar and cinnamon. Spoon apple mixture over cream cheese layer; sprinkle with pecans.
Return to oven and bake at 350 degrees F for 1 hour and 10 minutes. Loosen cake from rim of pan; cool before removing rim. Chill.
