This is a recipe for struffoli so good you can even eat them without the honey!
1 lb. butter, clarified (melt butter 10 minutes on low heat, then pour only the clear part of the butter into a bowl and allow to cool to room temperature) 12 large eggs 2 1/2 cups sugar 3 tbsp. vanilla extract grated zest of an orange unbleached flour (you'll use a few lbs. of flour) 2 tbsp. baking powder 1 gallon vegetable oil (for frying) 1 (32 oz.) jar honey colored candy sprinkles
Whip eggs in a very large bowl; add sugar , vanilla and orange zest. Now you can blend in the clarified butter.
Start adding flour 2 cups at a time with the baking powder until you reach a consistency of playdough (you'll use a few lbs. of flour).
Roll ropes about 3/4-inch in diameter and cut into pieces about 3/4-inch long. Lay out your pieces on sheets of waxed paper.
Heat vegetable oil till one struffoli cooks to golden brown in about 1 to 1 1/2 minutes. Add small batches and cook till golden.
Warm honey in a pot till just warm and pour over struffoli. Decorate on platters with colored candy sprinkles enjoy!
