These are the two best Chicken Salad Recipes I have tried and successfully made myself. I however must recommend a product (not included in these recipes) which I always put in my tuna and chicken salad if I am making it just for me. It is called Serendipity. It goes a long way so only use a dash. If you don't carry it in grocery stores where you live, let me know and i will send you label info so you can order it. Here goes: (Oh! Never use canned chicken!!)
HELEN CORBITT'S CHICKEN SALAD (This recipe is from the restaurant at Nieman Marcus)
2 1/2 cups diced cold chicken 1 cup chopped celery 1 cup sliced grapes (I use red seedless) 1 cup sliced toasted almonds 1 cup real mayonnaise (NOT MIRACLE WHIP) 1/2 cup whipping cream, whipped salt to taste.
This is wonderful especially if you make it at night and let it rest in the fridge until the next morning.
MY CHICKEN SALAD!
2 1/2 cups diced cold chicken 1 cup sliced grapes or craisins (dried cranberries) 1/2 cup walnut pieces 1/2 cup diced celery (optional) 1/2 cup real sour cream 1/2 to 3/4 cup real mayonnaise salt and sometimes serendipity depending on my mood.
Serve on a croissant or Orowheat OatNut Bread! This too is great if you can let it rest overnight in the fridge, but it is pretty great right away. Enjoy!!
