I wasn't sure if you had a homemade pancake recipe, so I decided to post this one. Anyway, I also figured if you did have it, maybe someone else could benefit from the posting. I don't buy those box or bag mixes anymore.

2 c. self-rising flour
1 tsp. baking soda
a little sugar (about a Tbsp. or so)
2 Tbsp. oil (I always omit because of the fat)
2 eggs (egg substitutes could be used)
buttermilk (I use milk soured by lemon juice)

Combine in order given. Add milk to consistency of thin cake batter. Cook on hot griddle until top is bubbly. Flip and brown on the other side. This recipe makes really fluffly pancakes.
