CORN PONES
3 cups stone ground cornmeal 4 tablespoons finely chopped ground unroasted peanuts 1 teaspoon salt 1/4 cup corn oil 1 cup boiling water
Preheat oven to 325 degrees F. Grease a baking sheet.
In a big bowl mix the cornmeal with the peanuts and salt. Add the corn oil and boiling water and mix for 2 or 3 minutes. If the mixture seems too stiff add a little more boiling water. Let cool.
When cool drop by heaping tablespoonfuls on to a greased baking sheet. Each heaping tablespoonful should equal to about 1/4 cup. Flatten slightly with a fork.
Bake at 325 degrees F for 40 minutes.
Serve warm with butter and honey. If there are any leftovers toast them under the broiler for breakfast.
