5 or 6 pounds hamburger 1 pound fat back 1/4 cup salt 1/4 teaspoon curing salt 2 tablespoon sugar 1 teaspoon ground cumin 1/3 teaspoon oregano 1 teaspoon thyme 1 tablespoon cracked pepper 1 tablespoon fine pepper 3 tablespoon chili powder 1 teaspoon anise seed 3/4 cup dry milk
Mix. Knead (like for bread) 5 minutes. Refrigerate—place in juice cans, covering each end with foil. Options: Pressure cook at 15 pounds pressure for 15 minutes. Oven cook at 325 degrees for 30 minutes. Smoke cook at 160 degrees for 6 hours.
Refrigerate for 24 hours.
