After picking up a box of Krusteaz Fat Free Cornbread mix I realized on the way home that I hadn't liked the taste at all when I first bought a box a year or so ago. I saw on the side of this box that one of the variations was to add a can of drained corn, which I did. I then replaced the 1 1/4 cups of water called for with 1 1/2 cups of lowfat buttermilk.

I baked them on our bbq using the indirect heat method (our bbq has a temp. guage on the outside which helps) at 400 degrees for about 20 - 25 mintues in a mini loaf pan (one pan with 9 mini loaf holes, like a muffin tin). They are outstanding!

I keep them in the refrigerator since they are fat free and I have noticed fat free baked goods spoil quickly. I ate one with whipped honey while it was still warm, very yummy! I have been crumbling the rest up in Fat Tuesday's Skinny Red Beans (previous post) or crumbled into a bowl, topped with sliced strawberries and milk.
