Hi..I just made this recipe today and it turned out great.
Peanut Butter Roll Candy
2 2/3 cup white sugar 2/3 cup white karo syrup 2/3 cup cold water 2 egg whites (room temp) 1 tsp. baking powder 1 tsp. vanilla Box powdered sugar peanut butter ( best if heated in microwave)
Put in first 3 ingredients in a saucepan & let boil until it spins a thread 2 to 3 inches long. While it is boiling put the egg whites in a large bowl and blend until fluffy. Add the baking powder & beat until firm. Pour the syrup into the egg whites, while beating the whites. Beat with mixer until firm or starts to lose its gloss. ( it took almost an hour with my stand mixer). ( needs to be a dough consistency) Add vanilla and beat with spoon until it's cool. Roll out on powered sugar until thin, and spread with peanut butter. Roll up and slice. ( best if you use dental floss or thread). Put in metal boxes.
