Just wanted to share our family's favorite Christmas cookie recipe. If I have time for nothing else, this is the unanimous choice...it wouldn't be the same without them. Hope you enjoy too! Merry Christmas from Kathy G.
Eggnog Cookies
2 c. flour 2 t. nutmeg 1/4 t. salt 1 c. butter, softened 3/4 c. sugar 2 t. vanilla 2 t. rum extract 1 egg and set aside
Icing: 1/4 c. butter, softened 1 t. rum extract 1/2 t. vanilla 2 1/2 c. powdered sugar 2-3 T. milk Glaceed cherries, cut in halves
Sift flour, nutmeg and salt together; set aside. Cream butter; add sugar and cream until fluffy. Add extracts and mix well. Add egg. Gradually mix in dry ingredients very well. Chill dough 30 minutes or overnight. Line baking sheets with brown paper. Shape dough by tablespoonsful into balls and place on papered sheets about 1 1/2" apart. Bake 12-15 minutes-do not brown. Remove from pans and cool on racks. Ice. Icing: Cream butter; add extracts and mix. Add powdered sugar gadually; mix well. Stir in enough milk to make spreadable but not runny. Top with half of a glaceed cherry. Yields 4 dozen.
