Peanut Butter Roll
2 egg whites 1 1/2 cups sugar 1/2 cup corn syrup 1/2 cup water pinch salt 1 tsp vanilla 1 medium jar peanut butter
In a saucepan, combine sugar, corn syrup, water, and salt; bring to boil and cook until forms ball. Do not under cook.
Beat egg whites until stiff; fold in 1/2 of the boiled mixture and beat until stiff. Add remaining boiled mixture along with the vanilla and beat until stiff,
In the meantime, spread out wax paper on a flat surface or cookie sheet and sprinkle with powdered sugar.
Knead the mixture until you are able to roll with a rolling pin. Roll out very thin.
Spread softened peanut butter evenly across top then roll (like a jelly roll). Let set for 15-20 minutes.
Cut into 1/2 pieces. Serve -- for best results store in refrigerator.
