Hi Kc and Schmitty, Since you are all still interested, I'm going to give you some of mom's recipes...she's a PASTA FOOL!!!! SPAGHETTI PIE If you make this with ground beef, it will have a mild flavor, for more zip...use sausage. 6 ounces spaghetti 2 tbsp. margarine or butter 2 well beaten eggs 1/3 cup grated parmesan cheese l pound ground beef, or mild italian sausage (remove from casing) 1/2 cup chopped onion 1/4 cup chopped bell pepper 1 - 7-1/2 oz. can chopped tomatoes (l cup) 1 - 6oz can tomato paste l tsp. sugar l tsp. dried oregano, crushed 1/4 tsp. garlic powder or salt l cup (8oz) ricotta cheese 1/2 cup shredded mozzarella cheese Cook spaghetti according to package directions; drain. (you should have about 3-1/4 cups of cooked spaghetti) stir margarine or butter into hot spaghetti. Sti in eggs and parmesan cheese. Press into a 10" pie plate, forming a crust. In a large skillet, cook beef or sausage, onion, and green pepper till vegetables are tender and meat is brown. Drain off fat. Stir in undrained tomatoes, tomato paste, sugar, oregano, and garlic powder/salt..heat thoroughly. Spread ricotta over bottom of the prepared spaghetti crust. Top with the meat mixture. Bake uncovered in a 350 degree oven for 20 minutes..sprinkle mozzarella cheese on top and bake 5 additional minutes...6 servings.
