I have adapted this from a greek restaurant we frequent. My frieds say it is better than "George's". Cut boneless pork into cubes. In bowl, marinate pork cubes with olive oil, lemon juice, fresh ground pepper, pinch salt and lots of oregano. Refrigerate overnight or at leeast 4-6 hours for flavours to absorb. Skewer on water-soaked bamboo sticks. Grill using left over marinade and occasionally sprinkling more oregano. Serve with rice, potato (roasted/fried) and greek salad.
Greek Salad - iceberg lettuce (no other seems the same), tomatoes, feta in small chunks (you can also add black olives/cucumbers, green pepper, etc.) fresh cracked paper and oregano. Toss with dressing made of olive oil, white vinegar.

Sorry I can't give exact amounts. I just throw it all in.
