Gevulde Koeken are a filled cookie. You roll out the cookies, flavoured with almond extract, and put a little almond filling, made with ground almonds, lemon juice, an egg, and sugar, on each cookie, then top it with another cookie, press
around edges to seal, brush with beaten egg and baked. They are very yummy. You can also make them as bars on a cookie sheet. I posted the recipe earlier this month. They are a bit of work, especially the cookie kind, but they are a hit.
