Hi Michelle! I just found your recipe for Amy's stir-fried noodles. This sounds good but I have a few questions. What is a Bombay onion? What is salt fish? What is "thick" soy sauce? Can I substitue any ingredients for these items? I love Singapore-style stir-fried noodles with curry in them too. I have several Singaporean friends (from my days in England)that are now back in Singapore. I think that might have to be a stop-over on our future journey to Australia. I hear that the food is fantastic! One of my best pals here is from Singapore too and, although she is quite slender, all she does is eat! I love going to her parties as her friends bring food from all different countries. Japan, Philippines, Malaysia, Indonesia, India, China. As you can imagine, it is wonderful.
