Talked to my mom about her kapusniak recipe. She doesn't make this very often but my baba loved it.
In a pot of water boil smoked pork hock, beef bones, or spareribs. (Any or all together) Add one bag or large jar of sauerkraut. Rinse if it's very sour. Add one or two bay leaves, garlic clove(s), 1/4 of onion, about a fist full of quick cooking barley, bullion, salt & pepper. Cook until meat falls apart. Saute the 3/4 onion in butter until just soft. Add to kapusniak at the end. Boil for a few minutes. Some people add white beans or dried mushrooms. Mom said the mushrooms are really good.
As you can tell this is from the top of her head and not measured. Just use your discretion when adding garlic, bullion and salt & pepper. We use a lot of garlic! Mom has a friend at church who makes a great kapusniak. She said she'll get the recipe this Sunday and will call next week.
