Dear dear dear Cathy,

I felt like going to NYC to visit you right now!!! I am in my local library to check some books out and happened to use the pc for some research while I am waiting for Chris... (He is looking for some medical books...) Anyway, I have to tell you that yes, this beef recipe you posted above is the exact dish that I am looking for!!! I will try it soon after I feel better. Thanks for everything!!!

I feel as if I have been for Japanese cooking leesons each time I read your posts... I love all traditional Japanese cooking! I haven't had a chance to try the custard soup as there was one item missing (out of stock) when I visited my local Japanese grocer last week. I will definately let you know how it turns out. (I can probably just tell you now that it's going to be a hit! Not a single recipeof yours ever fails!!!)

As far as the Chinese MaPo tofu recipe, make sure that you taste the seasoning first as I knwo many people think it's too spicy and salty... Not all people like hot and spicy and... I hope it works for you... (As you are such a great cook, I am worried that my recipe is not up to your standard!!! Dah!!! My heart is pounding!!!)
