I get the feeling that "Kimchee" may be a general term which refers to pickled vegs. so please bear w/ me in my ignorance. I do know what I like however and this is what I'm looking for: In NYC, my favorite Korean deli has asst. Kimchee on their salad bar. My favorite is a bright green veg. which is long, slim, tender-crisp and flavored w/ hot spices and vinegar. I have no idea what it is or how it's prepared. Sorry if I'm being very vague, but I'm addicted to this stuff! I hope that someone of Korean decent can help me make delicious salad. I would be very appreciative to get a response.
