Steamed Spareribs with Sweet Potato
serve 6 with 2-3 other dishes

500g pork back ribs
(1) 1 T. each: light soy sauce, sweet bean paste, cooking wine or dry sherry
**If sweet bean paste is not available, double the soy sauce.
Pinch of white pepper powder
1/2 T. each: minced (young) ginger roots and garlic cloves
1 1/2 T. water
1 pkg. "Jen Rou Fen" (prepared rice powder for steaming meats) (about 1/4 cup)
** Should be able to get this in Asian shops. Or make it your own. See note.
1 cup sweet potato, peeled and cut into bit-size pieces (about 1/2 cm thick)
2 T. chopped green onions

Cut the ribs into pieces; add (1); mix and marinate for at least 30 minutes. Add "Jen Rou Fen"; mix well to coat.
Line the bottom of a steamer with a sheet of foil, then followed by the sweet potato pieces (only one layer). Place the ribs on top of the sweet potatoes. Steam for 1 hour. Remove to a serving platter; sprinkle with the chopped green onions. When you eat this dish, make sure you eat the ribs together with the sweet potato pieces!!! YUM!!

Note: Dry roast 1/4 cup of med. grain rice with 1/4 t. five spice powder 1/4 t. Sichuan pepper POWDER or white pepper POWDER in a pan with low heat until fragrant and the rice turns brown. Cool completely and grind it until fine in a coofee grinder. It's ready to be used!
