I just digged this up for you. This is the kind served in the Dim Sum restaurant (not the other kind I gave you earlier). Sorry about the delay. ======================================== Steamed Chicken Feet In Black Bean Sauce
Ingredients: 8 pairs chicken feet
Marinade 2 tsp preserved soya beans ('taucheo') — minced 1 tsp Lee Kum Kee black bean garlic sauce 1 tsp Lee Kum Kee (Premium) oyster sauce 4 chilli padi —(bird's eye chili) chopped 1 red chilli — chopped 1 tsp light sesame oil 1 tbsp soft brown sugar or to taste 1/4 tsp white pepper poeder 1/4 tsp dark soy sauce (mushroom soy sauce) for coloring
CHOP off nails of chicken feet and wash well. Blanche in boiling water for 1 minute. Drain well. Chop into 2 sections and brush with dark soya sauce. Deep fry until golden brown. Soak in water until it is puffy. Marinate deep-fried chicken feet with marinade ingredients for at least an hour. Place all the ingredients in a big bowl and steam over boiling water for an hour or until chicken feet is tender. Thicken gravy with corn flour and water mixture. Dish out and serve in small sauce dishes.
