This is a recipe for Greek Potato Salad
2 pounds unpeeled new potatoes cooked and cooled 2 medium yellow onions peeled and slicked very thin 1/2 cup parsley chopped 1/2 cup olive oil 1/4 cup white wine vinegar 2 teaspoons whole oregano crumbled in your hand Salt and pepper to taste. After you have cooked the potatoes drain the water. Cut up potatoes and toss with all the remaining ingredients. Serve hot or chill and serve the next day. Serves about 6 to 8 people.
