UKRAINIAN SAUERKRAUT MORSELS APPETIZERS:
Try these tasty tidbits and see if your guests can guess how you made them.
2 1/2 to 3 cups sauerkraut 1 lb bulk pork sausage 1/2 lb lean ground beef 1/2 onion, finely chopped 3 Tbsp dried parsley 1/2 tsp dried mustard 1/8 tsp salt 1/8 tsp pepper 1 tsp sugar 3/4 cup dried bread crumbs 3 eggs 1/4 cup milk bread crumbs for coating
Chop sauerkraut very finely and mix with the meats, onions, parsley, mustard, salt and pepper, and sugar. Cook this mixture in a large skillet over moderate heat until the meat is browned. Remove skillet from heat and stir in the bread crumbs. Slightly beat 1 egg and add to the meat mixture. Mix well and set aside to cool.
When cool, form into balls about the size of a walnut. Beat the remaining eggs together with the milk. Dip the balls into the egg mixture, then roll them in the crumbs, and place on a cookie sheet. Broil for about 1 minute then turn and broil on the other side.
The mixture can be prepared to the formation of the crumbed balls, refrigerated and broiled when needed.
