Almond Chicken II Contributed by Alexis from the Forum.
Ingredients Batter: 1 cup flour 2 tsp. baking powder 1/2 tsp. salt. 1/4 tsp. MSG 1 Tbsp. Oil 3/4 cup or more cold water 1/4 c. almond meal (Make this by putting fresh almonds in a blender).
2 raw, boned chicken breasts, cut into fillets Oil to deep fry chicken
Sauce: 3/4 tsp. molasses or hoisin sauce 1 cup chicken stock 2 tsp. soy sauce 1/4 tsp. MSG 1 tbsp. cornstarch 1 tbsp. water 3/4 cup toasted almonds
Preparation Make batter by combining the flour, baking, salt, MSG, oil, water and almond meal. Dip fillets into batter, deep fry until brown. Cut into serving slices.
Mix the molasses or hoisin sauce, chicken stock, soy sauce, and MSG in a small saucepan. Add cornstarch and water. Heat until thickened. Pour sauce over chicken and sprinkle with toasted almonds.
