Diane: This is a scone recipe used by a local hotel that serves " English High Tea".
Ginger Scones
2 cups all-purpose flour 3 tbsp. sugar plus extra for sprinkling on scones 2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1 tsp. cinnamon 2 1/2 tsp. ground ginger 5 1/3 tbsp. cold unsalted butter cut into 1/2 inch pieces 1 large egg 1/2 cup light molasses 1/2 cup buttermilk 2 tbsp. milk plus extra for brushing on scones 1/3 cup finely chopped crystallized ginger
Preheat oven to 375 degrees. In a large bowl sift flour, 1 tbsp. sugar, baking powder, baking soda, salt, cinnamon, ground ginger. Add butter and combine until mixture resembles coarse meal. In small bowl whisk together the egg, molasses, buttermilk, 2 tbsp. milk, the remaining 2 tbsp. sugar, crystallized ginger. Add to the flour mixture and stir with fork until it just forms a sticky but manageable dough. Turn out on lightly floured board and knead gently...repeat gently... Pat it out into a one inch round and with 2 inch biscuit cutter dipped in flour cut out scones. Brush with the additional milk, sprinkle with additional sugar and bake in middle of oven for 12-l5 minutes, or until they are golden. Makes about 24 scones. Enjoy!
