These cookies are crisp and light.
4 large eggs 2 egg yolks 2 tablespoons whipping cream 2 teaspoons rum 2 teaspoons brandy 4 cups unbleached flour or all-purpose 1 teaspoon baking soda 1/4 teaspoon salt
Vegetable oil for deep-frying powdered sugar
In large bowl, beat together eggs, egg yolks, cream, sugar, rum, and brandy.
Sift together dry ingredients and gradually add to the egg mixture.
Knead lightly into a smooth dough. Divide into four equal portions, roll each portion of dough on a floured surface to 1/8-inch thick.
Cut into 6 x 3/4-inch strips.
Heat oil to 375 degrees F. Make a 1-inch slit 2 inches from one end of each strip.
Push the opposite end of the STRIP into the slit, pulling it out slightly on the other side. To form a bow tie.
Deep fry until golden (about 3 to 4 Minutes). Drain, cool, and sprinkle with powdered sugar.
Makes 5 dozen.
