MEDIVNYK: Some of the older honey cake recipes call for yeast as an additional leavener. Dark buckwheat honey is preferable.
1 package dry granular yeast 3 tablespoons lukewarm water 2 cups honey (dark buckwheat honey is preferable) 4 tablespoons butter 4 eggs 3 1/2 cups sifted flour 1 teaspoon baking soda 1 teaspoon cloves (ground) 1 teaspoon cinnamon 1/4 teaspoon salt
Sprinkle the yeast over the lukewarm water and let it stand until softened. Bring the honey to a boil and cool it slightly. The honey should be warm. Add the butter to the warm honey and beat thoroughly. Let cool to lukewarm. Beat the eggs until light and combine with the honey. Sift the flour with the dry ingredients. Stir some flour into the egg-honey mixture, add the yeast, and beat well. Stir in the remaining flour. Spoon the batter into a well-buttered loaf pan. Bake in a moderate oven (325 degree F) for 1 hour, or until done.
