Hi Anita,

Here is a Crayfish Pie recipe for you!

CRAYFISH PIE

2 pounds crayfish
1/2 cup cooking oil
1 cup chopped onions
1/2 cup chopped celery
1 tablespoons crayfish fat
1 and 1/2 cups water
2 tablespoons cornstarch
1/2 cup chopped onion tops
1 tablespoon parsley flakes
salt and red pepper to taste

Season crayfish tails with salt and pepper and set aside. Sauté onions an celery in oil over medium heat until onions are wilted. Add crayfish and crayfish fat; let cook 20 minutes. Add cornstarch dissolved in 1 and 1/2 cups of water. Cook until thick, stirring constantly. Add green onions and parsley; correct seasoning with salt and pepper, set aside to cool. Fill small pastry shell then cook at 350 degrees for 30 minutes. Enjoy!
