Kazakhstan Kirghiz Baked Beef:

Yield: 8 servings

2 lb Flank steak, Chopped 1/2"
1 Large Onion, Chopped
1 Med. Green Pepper, Chopped
2 tbs. Olive oil
1 cup Yogurt (Plain)
2 Large Eggs
2 Apples Diced
1 cup Chopped Dried Apricots
1/2 cup Raisins
1/2 cup Prunes dried, pitted and chopped
2 tbs. Curry Powder
1 tsp. Salt
2 tsp. Pepper

Sautee onion & green pepper in olive oil in large heavy skillet until onion is transparent. Add chopped beef and brown lightly. Pour off drippings. Add eggs, apple, apricots, curry powder, salt and pepper to beef. Add yogurt & mix well. Place in a large, deep casserole & bake in a 350 degree F. for 45 minutes.
