Cooper's Zimbabwe Bean Salad:
Prep: 10 min, Marinate: 24:00, Cook: 5 min, plus chilling time.
2 cloves garlic, crushed 2 Tbs. plus 2 tsp. vegetable oil 2 Tbs. plus 2 tsp. dark brown sugar 2 Tbs. plus 2 tsp. vinegar 1/4 tsp. dried basil 1/2 lb. canned baked beans, drained 1/2 lb. canned butter beans, drained 1/2 lb. canned green beans, drained 1/3 cup onion, chopped 3/4 green bell pepper, seeded and chopped
Combine first 5 ingredients with salt and pepper to taste in a heavy saucepan over medium high heat. Simmer 5 minutes. Combine remaining ingredients in a serving bowl. Pour hot dressing over vegetable mixture. Mix thoroughly. Cover and let marinate at room temperature 24 hours. Chill before serving.
