I was born and raised on Guam. I am presently residing in the U.S. Just happened to stumble on your request while searching for some recipes on this site. Here is a delicious recipe for pancit :

1 onion
4 cloves garlic, crushed
1 cup shrimp (precooked and chopped but too fine or to taste)

1 cup pork (precooked and chopped or to taste)
1 cup cabbage (chopped but not fine)
2 carrots (slivered)
4 tablespoons Kikoman soy sauce (dark and regular)
1 cup water
1 tsp. Salt (or to taste)
1/4 tsp. pepper (or to taste)
14 oz. Pancit noodles (oriental market would have this or oriental section of grocer).

Lemon wedges (decoration or to use when serving)

Procedure:
Using a large skillet or frying pan, lightly saute' onions and garlic in oil (canola or vegetable oil). Add the pork and/or shrimp. Add cabage, carrots, soy sauce and 1 cup of water. Turn heat to medium and simmer for about five minutes. Stir and simmer until carrots are cooked. Place the noodles on top of mixture and spoon vegetables and broth over the noodles. You might have to add a little more water if the noodles have not wilted. Cover and allow it to steam for about 2 minutes. When cooked, serve on a platter and garnish with lemon wedges. The recip can be varied with chicken, bean sprouts, or green onions. This will serve about 4. ENJOY!
