Raisin omelet is a favorite Arab dish. In some parts of Saudi Arabia it is made with fresh grapes, instead of raisins. When the omelet is filled, yogurt mixed with cottage cheese is used instead of milk.

2 tablespoons raisins ( or 3 tablespoons fresh grapes), crushed
2 tablespoons milk (or yogurt)
Dash cinnamon, or cinnamon stick
Dash nutmeg
3 whole cloves
1 teaspoon vanilla sugar or vanilla stick

1 tablespoon butter
4 eggs, beaten
1 tablespoon sugar

1 cup cottage cheese (optional)
2 tablespoons yogurt (optional)

Soak raisins in milk seasoned with cinnamon, nutmeg, cloves, and vanilla for 1 hour.

Drain raisins. Strain milk and RESERVE. Heat butter in a skillet. Combine beaten eggs, seasoned milk, sugar, and raisins, and pour into skillet. Cook omelet on both sides, and serve at once.

If you wish to fill the omelet, soak the raisins in the cottage cheese mixed with yogurt, and heat the mixture. When the omelet is ready, spoon the warm cheese with raisins over it, sprinkle with vanilla sugar, and fold in half. Serves 4.
