1 1/2 cups all purpose flour 1/2 cup unsalted butter, softened 1 teaspoon salt 1 hard cooked egg yolk, sieved 1 raw egg yolk 2 tablespoons sugar 1 teaspoons grated lemon rind
1/4 pound pot cheese 1/4 cup unsalted butter 1/2 cup sugar 3 tablespoons ground blanched almonds 1/2 teaspoon salt 1 teaspoon grated lemon rind Juice of 1/2 lemon 4 egg yolks Nutmeg
Put flour in a mound on board. In center, put next 6 ingredients. Working with finger, knead together to form a smooth mixture. Shape into a ball and wrap in wax paper. Chill while making the filling. Sieve cheese. Cream butter until light and beat in cheese. Then beat in remaining ingredients, except nutmeg. Divide chilled pastry in 12 pieces. Press each piece into a 3-inch tart pan.
Fill two thirds full with cheese mixture and sprinkle tops with nutmeg. Bake in preheated moderate oven 350 degrees F. for 25 minutes, or until tarts are lightly browned and filling is just set. Remove from pans while warm. Makes 12.
