Hi Coni, I live in Buffalo, great place.... Here's my recipe for Eclair Cake that goes very fast in my house. Bottom: 1 cup water 1 stick (1/2 cup margarine) 1 cup flour 4 eggs In a saucepan, bring water and margarine to a boil. Stir in flour. Add eggs one at a time till smooth. Spread on cookie sheet (9x13) that has been greased with margarine, and bake 350 for 30 minutes till golden. Cool. Filling: 3 cups of milk 1 (8 oz.) pkg. cream cheese, softened 2 boxes (3 oz each) vanilla instant pudding 1 (12 oz) container Cool Whip, thawed 1 can of Hershey's Chocolate Syrup In a bowl mix together milk, cream cheese, and instant pudding mix. Spread over cooled crust. Top with the Cool Whip. Refrigerate till ready to eat. Before serving drizzle with chocolate syrup. ENJOY...
