Potato Balls
Meat Balls: 1 lb. lean ground beef 3/4 c. 3-minute quick oats 1/2 c. catsup 1/2 c. shredded raw carrot 1/2 c. finely chopped celery 1/4 c. finely chopped green pepper 1/4 c. dry onion soup mix 1 egg, slightly beaten 1 Tbsp. minced parsley
Oat-Potato Blanket: 3 c. mashed potatoes 1 egg 2/3 c. 3-minute quick oats 1/3 c. grated Cheddar cheese 1 Tbsp. dry onion soup mix 1/4 tsp. paprika 1 Tbsp. melted butter
Combine meat ball ingredients and mix well. Shape into 12 meat balls. Brown on all sides in lightly oiled skillet. Remove meat balls to a 9 x 13-inch baking dish. Whip potatoes with egg and spoon about 1/4 cup over and around each meat ball to form individual servings. Toss oats with cheese, soup mix, paprika and butter. Sprinkle generously over meat-potato balls in dish. Bake at 400 degrees for 15 to 20 minutes or until potatoes are set and crumb coating is delicately browned. May sprinkle with shredded Cheddar cheese during last 5 minutes of baking, if desired.
