I absolutely love pastitsio and it would be a terrific dish to take to a pot luck. Just plan on taking it from the oven right before you leave for the gathering. It's like a thin layer of savory meatloaf topped with macaroni and cheese - what's not to love!?!

You could make your spanakopita ahead of time and serve it room temperature, too. It is perfectly fine to serve it room temperature (definitely don't refrigerate it or serve it cool, though). You can make it in a layered style, or make individual serving triangles.
