Scandinavian Fruit Soup By Mark "Umlaut" Cleveland
1/2 pound dried prunes 1 cup raisins 6 ounces dried cherries 1/3 pound dried apricots 1 whole orange 1 whole lemon 3 tablespoons tapioca large 2 medium apples diced 2 medium pears 2 tablespoons brown sugar 1/3 cup honey 1 large cinnamon stick 1 cup sweet vermouth optional 1/2 cup port wine 2 cups grape juice
Cover the dried fruit with water by about 2 inches, add sliced lemon and orange, tapioca, sugar, honey, cinnamon stick, vermouth and port. Soak overnight. Then add the diced fresh fruit, and grape juice. Cook until fruit is soft and tender. Serve warm or chilled. Notes: Substitute spiced tea or more grape juice for the alcohol if you'd like.
