Rice Crust Pizza
Crust: 2 cups cooked long grain rice, such as basmati 1 egg, beaten 1 cup grated mozzarella or cheddar cheese
Topping: tomato sauce, with spices of choice mixed in favourite pizza toppings grated cheese Mix crust ingredients thoroughly by hand - perfect for a child to do! Press evenly on pizza pan or cookie sheet to form base with 1/2 inch high edges. Bake at 350 F until set, about 12 minutes. Top first with tomato sauce, then pizza toppings and finally with grated cheese - more fun for a child. Bake again until cheese on top is bubbly, about 15-20 minutes. Enjoy hot or cold (at a picnic).
