The recipe I use to make either hot dog buns or hamburger rolls follows, but I don't know anyone who makes their own hot dogs/frankfurters. Hot dog tastes can be a very regional affair. I grew up loving Sabrett all-beef, but Boar's Head all-beef have won me over as well. I have a friend from Buffalo, NY who says nothing beats a Sahlen's hot dog, and yet another from the mid-west who won't eat anything but a Vienna brand hot dog. And then there are the kosher ones, Best, Shofar, Hebrew National (with their questionable hechsher/certification). Not to mention those who have 'gone healthy' and switched to chicken hot dogs or vegetarian hot dogs.
I guess I'm saying if you have any way of importing ready-made hot dogs, you'll get more consistant results. But, should you find a recipe I would love to see it!
Here is the bun/roll recipe I use:
Automatic Bread Machine Hamburger/Hotdog Buns
1 cup water 1 egg 2 cups all purpose flour 1 cup bread flour or whole wheat flour 3/4 tsp salt 1/4 cup shortening 1/4 cup sugar 3 tsp yeast
Put all ingredients in the automatic bread machine, choose dough cycle. When done, remove dough and gently roll into a cylinder shape about 12 inches long. Divide dough into 12 equal sections for hot dog buns (8 for hamburger buns)Shape sections into 6 in. tube shaped rolls for hot dog buns. (for hamburgers roll into balls and then flatten top slightly). Place on greased baking sheet. Cover and let rise 10-15 mins. Bake @ 400°F 12-15 mins.
I like my hot dogs with Guldens mustard, 'bar-be-que' onions, pickle relish, and warm sauerkraut. But, you'll get as much diversity in the debate about what goes on a hot dog as in which brand is best.
