I have not made this recipe, but thought it looked good. I cannot recall where I obtained it from.

Apple Fritters

1 tablespoon active dry yeast
1/2 cup warm water
1/2 cup plus 2 tablespoons sugar
1 large egg, slightly beaten
3 tablespoons olive oil
1/4 cup dry white wine
1/8 teaspoon salt
1 cup all-purpose flour
1 pound apples, peeled, cored, and sliced into 1/4-inch rounds
4 cups vegetable oil, for deep-frying

In a bowl, dissolve the yeast in the warm water, then add 2 tablespoons of the sugar, egg, olive oil, and wine. Blend well.

In a separate bowl, mix the salt with the flour and add to the yeast mixture. Beat with a whisk until it is like pancake batter. If the batter seems too dry, add a little more wine or water. Set the batter aside.

Place the remaining sugar on a plate and set aside.

In a heavy pot or deep-fryer, heat the vegetable oil to 375F. Coat a few apple slices at a time on both sides with the batter, letting the excess drain off. Fry the slices until golden brown, about 3 to 4 minutes.

Drain on brown paper. When cool enough to handle, gently press the apple slices into the sugar on each side. Arrange slices on a platter and serve immediately.
