While living abroad we enjoyed this sausage made with lamb & beef called Cevapcici from Yugoslavia:

1/2 cup finely chopped onions
1/2 tsp minced garlic
cooked in:
1 Tbsp lard
Add:
1 lb each ground beef and lamb
1 egg white
1 Tbsp sweet Hungarian paprika
1 tsp salt

Mix well with hands or wooden spoon. Shape into cylinders 1-inch in diameter and 2-inches long. Refrigerate at least 1 hour to firm them.

Thread on skewers thru the sides leaving 1/4-inch between and grill or broil.
