I tried this recipe twice for chicken siopao. First, the recipe called for too much flour. I made the recipe as directed and the dough was hard and didn't rise. I remade it, adding flour as necessary and it rose better but still not ideal.
I have to say that my mom has made siopao in the past and this dough needs a lot of work, despite the changes that I made. I recall the dough being very light and airy. This dough was difficult to work with. I would not recommend it at all.
