There isn't any one recipe for Japanese Dynamite Rolls, but the sauce is made from mayonnaise plus hot sauce. Most restaurants here use Sriracha sauce, a Vietnamese-style hot sauce made in California. I don't remember the Vietnamese brand name, but it's sold in Asian markets in a plastic squeeze bottle with a green rooster on the label. Some restaurants also add a little bit of tiny roe (such as masago) to the sauce.
