PORK GREEN CHILE

This is a recipe that I've grown up with.

1 Tbsp lard
~1/2 lb pork, cubed and fat removed (easy if you use pork chops)
2 Tbsp flour
6 to 8 large roasted green chiles, diced (you can buy them canned or roast them yourself)
~1 cup warm water
garlic salt to taste
salt & pepper

First, heat lard in skillet. When lard is hot, add pork and cook until brown.

Sprinkle flour over browned pork and brown flour.

Once flour has browned, add diced green chile to skillet. Add about 1/2 cup of water and continue to stir. Mixture will thicken. Continue to add water and heat until desired thickness.

Season with garlic salt, and salt and pepper to taste.
