There are numerous varieties of this style bread. Some with-out yeast as well. They are baked in a tandor- a clay oven which is heated with either charcoal or wood. This oven reaches very high temperatures... baking this bread with-in a matter of minutes. (my opinion it sounds similar & looks like a un-topped pizza.)
