Try this. Put 2 beaten eggs in a tall, narrow, heat proof cup and (if you have one) submerge the steaming wand of an espresso machine into the eggs and STEAM em! My local coffee shop does this and, man, the fluffiest most colorful eggs you’ve ever seen.
