5 cups (500 grams) flour 3 1/2 ounces (100 grams) white wine 1/2 cup (100 grams) extra virgin olive oil salt 10 egg yolks 14 ounces (400 grams) fresh cheese (grated)
Knead the flour with the wine, oil and a pinch of salt. Roll out a very thin layer of the dough and line a baking dish, roll out enough dough to cover the dish.
Beat the eggs with the cheese which has been finely grated in a blender. Pour the mixture into the lined dish and cover with the dough.
Brush with egg yolk and bake for 1 hour 20 minutes.
