I obtained this recipe from my aunt in Nebraska.
RHUBARB COBBLER
Into 9x9-inch buttered baking dish place: 3 cups diced rhubarb
Sprinkle over rhubarb: 1 cup sugar 1 1/2 Tablespoons cornstarch
Combine the following batter ingredients and dollop over rhubarb: 1 cup flour 3/4 cup sugar 1/2 cup milk 3 tablespoons melted butter 1 teaspoon baking powder 1/4 teaspoon salt
Pour 1 cup boiling water over all.
Bake 45 minutes in 375 degree oven.
Optional: For a slightly different flavor, I've even added a teaspoon of cinnamon to the sugar and cornstarch, which makes it reminiscent of apple pie.
Delicious when served warm with vanilla ice cream!
