Are you thinking of palascinta? (Pronounced puh-luh-CHEEN-ta) This is a Hungarian word, but my Romanian grandmother made them. It sounds similar. She would make a yeast raised dough, roll it into thin rounds, pile the filling in the center, pull the edges up, twist slightly at the top and then roll them out again. She let them raise again and then fried them in vegetable oil. A Romanian waiter once told me that you could buy these right on the streets in Bucharest. In Hungary they are crepes.
So if this is what you are thinking of, you can use any dough recipe you like, but be sure to add a dough relaxer to aid in the rolling. I like mine filled with cheddar or American cheese, but other members of my family like them filled with mashed potatoes and dill. I once didn't have enough left-over mashed potatoes so I added Rondele and feta cheese to them and they were absolutely delicious!
