Pan de Manteca (Sobao)

5 lbs. flour
1 1/2 oz. salt
3/4 cup of sugar
1/2 cup shortening
2 litres water
1/2 oz. of dry yeast

Mix water, sugar, salt and shortening for 2 or 3 minutes. Add flour and yeast. Using a heavy duty mixer; knead the dough for 15 minutes.

Divide the dough in 5 equal portions and shape them into loaves. Place loaves on baking sheets and allow to rise until doubled.

Bake in a 340 to 350 degrees F preheated oven, until golden. The loaves are done if tapping on them makes a hollow sound.
